While several scientific studies have highlighted the influence of seeds on wine colour and composition, few have explored the influence of stems on wine colour, composition and quality.

A team of Spanish researchers have investigated how seeds and stems contribute to the colour, astringency and phenolic composition of a Cabernet Sauvignon wine.
